Tuscan style stuffed mushrooms with a preserved sun dried tomato, pepper, marrow and caramelised onion salad.

The dish consists of herb crusted Portobello mushrooms filled with sautéed spinach and topped with grated mozzarella and paired with a Tuscan sauce of charred red peppers and coconut milk.

Olive oil and basil marinated sun dried tomatoes, marrows and peppers with caramelised onion are included as a side dish.
